Our Limited Edition Apple & Honey Gin is back, crafted once again with crisp apples and blossom honey.
This small-batch spring gin is produced here at our distillery in Ellesmere, Shropshire, and released just once each year.
A Gin That Marks the Season
Some things just feel like spring.
The first warm evening.
Blossom appearing on the trees.
And, in our house, the return of Apple & Honey Gin.
Each year when we release this gin we hear the same thing from our community:
"I’ve been waiting for this one."
That never gets old.
This is a true limited edition. We make it in small batches and release it once each spring. When the final bottles leave the distillery, that’s it until next year.
Like all of our spirits, it’s distilled in small batches here at the distillery using our traditional copper pot stills, carefully capturing only the pure hearts of the run.
The Role of Honey in the Gin
For this year’s batch we’ve again used Blossom Honey from Hilltop Honey, which is distilled as part of the botanical recipe rather than added afterwards.
That’s an important distinction.
The honey doesn’t make the gin sweet. Instead, it contributes delicate floral aromatics and a rounded depth that complements the apple and lifts the botanical profile of the gin.
Alongside the apple and honey, you’ll find rose and hibiscus within the botanical profile layered over our juniper-led base.
The result is something unmistakably spring-like — fresh, floral and gently warming, while still remaining balanced and unmistakably gin.

• 50ml Apple & Honey Gin
• 25ml Fresh lemon juice
• 25ml honey syrup

• 25ml Apple & Honey Gin
• A splash of elderflower cordial
• Top with sparkling wine

Apple & Honey Gin – Questions People Often Ask
Does Apple & Honey Gin taste sweet?
Not in the way you might expect.
Although blossom honey is used during distillation, it isn’t added afterwards as a sweetener. Instead, the honey is distilled alongside the botanicals, contributing aroma, floral character and depth rather than sweetness.
The result is still very much a juniper-led gin, with crisp apple notes and soft floral layers.
