Collaborations & Challenges

We have once again teamed up with James Sherwin from Wild Shropshire!

James will be working with us on a number of different projects and challenges throughout the year as our Brand Ambassador.

James' restaurant; Wild Shropshire is described by the MICHELIN Guide as:

"The epitome of a field-to-fork experience, Wild Shropshire’s cooking focuses on terroir-led, micro-seasonal dishes using ingredients from artisan producers and growers in the surrounding area. The surprise, multi-course tasting menu changes daily and dishes are creative, sophisticated and full of depth."

This month we challenged James to create a cocktail and a food recipe using our Limited Edition Apple & Honey Gin

Heres what he created:

Cocktail Recipe

25ml Shropshire Apple & Honey Gin
25ml Burnt Yogurt Whey
Pine Citric acid and saline solution to taste

The idea with this to play with the combination of apple and yoghurt.
We mix the yoghurt with equal parts sugar for 48hrs at 80°C
This produces an almost Christmas pudding like flavour, we add the pine citric acid solution (instead of lemons) to balance the sweetness and a little saline solution to balance overall.

Refreshing and balanced!

Food Recipe

Brown butter, Shropshire Apple & Honey Gin, Blueberry & Apple

Brown butter, Shropshire Apple & Honey Gin, Blueberry & Apple

Brown butter cake, soaked in Apply & Honey Gin, fermented blueberry sorbet, apple ice cream spiked with Apple & Honey Gin.

The ice cream is espuma’d into liquid nitrogen to give the rocky texture.

Here we are plying with the classical combination of apple and blueberries, we just mess with the acidity, saltiness and texture of the dish to make it more interesting

Delicious!

James will also be throwing a few challenges our way at the distillery too! We can't wait to see what they are and share the results with you.
